UC Online Course Highlight: NUT 010V “Discoveries and Concepts in Nutrition”

Maintaining a healthy lifestyle is easier said than done. Yet with everything that is going on in the world, taking care of your health and prioritizing what your body needs is more important than ever. One very important–yet often overlooked–aspect of a healthy lifestyle is proper nutrition. We live in a society where fast food is all around us, and pre-made meals are a tempting steal at the grocery store–especially for students shopping on a budget. With these options, students often struggle to make nutritious food choices and are unsure of where to look for dietary guidance. Introducing Discoveries and Concepts in Nutrition; an online course offered by UC Online designed to instruct students on the nutritional properties of foods. This course will provide insight on how to maintain a balanced diet and make healthy food decisions, no matter where you are.

Discoveries and Concepts in Nutrition presents the concepts and rationale of nutrition in the context of personal and world aspects of human nutrition. This course inspires students to think critically about their own food choices and integrate new knowledge of nutritional concepts to their lives and futures. By developing an understanding of the key features of nutrients and to identify good food sources, students will be able to analyze popular nutritional developments, trends, and fads to evaluate potential health impacts and inform healthful decision making.

This course is open to all UC students and is conducted completely online. Instruction primarily occurs through pre-recorded modules which can be watched online on Canvas. Following completion of each module, students are expected to take a 5-point open book quiz, where the lowest two quiz scores will be dropped from the final grade. This course also offers students the unique opportunity to implement nutritional knowledge in their own daily lives through a personalized food diary. Students will be instructed to make calculations of nutritional intake, record eating patterns and behaviors, and reflect on dietary choices. This Food Diary project will be turned in and graded. In addition to both this and chapter quizzes, grading will also be based on two midterms and a final exam. Exams will be conducted online via the Examity proctoring service. Discoveries and Concepts in Nutrition is a wonderful course for students looking to learn more about how to make healthier food choices in their everyday lives. Proper nutrition is very important to maintaining a healthy and happy lifestyle and should be something that people prioritize in their lives. No matter where you are, nutritious food options are all around–you just have to know what to look for! This course provides students with the knowledge they need to make healthy food decisions and live a fulfilling and nourished lifestyle.
